蚂蚁上树是一道传统的川菜，也是川菜中的经典菜式之一。它的主要原料是粉丝和猪肉末，粉丝看起来像是树枝，猪肉末则像是树上爬行的蚂蚁，因此得名“蚂蚁上树”。其制作方法是先将粉丝用热水泡软，捞出备用；然后将猪肉末和葱姜蒜等佐料炒熟，加入豆瓣酱、酱油等调味料炒匀，最后将泡好的粉丝加入锅中煸炒，使粉丝充分吸收汁水，烹制出一道香辣鲜美、口感软糯的川菜佳肴。
